Red peppers are simply green peppers that have been allowed to fully ripen on the plant — and that extra time makes all the difference. They are sweeter, richer in colour, higher in natural vitamins and far more versatile than their unripe green counterparts. Thick, juicy flesh. Bright flavour. Each pepper is selected for colour depth, firmness and condition. A good red pepper should be deeply coloured, completely firm, glossy and feel solid and heavy. Any showing soft patches, wrinkles or pale colouring is rejected before packing.

- Can be frozen — slice or dice, freeze flat on a tray then transfer to a bag. Use from frozen in cooking. Not suitable for eating raw after freezing.
